Okay, I have to admit, I have yet to perfect a healthy pie crust recipe. Every dairy and gluten-free version I've tried just hasn't cut it. It's a little disheartening that so many recipes for vegan pie crusts call for vegan butter or shortening, and well, most of those contain oils that can become unstable and dangerous to our health when exposed to heat. So, I am bound and determined to get one perfected. One day (hopefully sooner than later), I will get a healthy gluten and dairy-free pie crust down and share it with you.
For now, I just had to share this Easy Homemade Peach Pie Filling because it's seriously so good and so easy! Plus, you can make tons of yummy treats with it, even without any pie or pastry crust.
What Makes This Peach Pie Filling Healthy?
As mentioned above, this peach pie filling has a healthier twist. Its sweetness comes from only peaches and maple syrup. Which means, it contains no refined sugars. It's also thickened with arrowroot rather than cornstarch, making it an excellent anti-inflammatory option.
Not only that, it's also completely dairy-free and vegan! But, you would never guess because it packs a bold peachy-cinnamon flavour, just like a traditional peach pie filling. And it provides the same ooey-gooey goodness too.

How to Make Homemade Peach Pie Filling without Cornstarch
I can't emphasize enough just how easy this healthy Peach Pie Filling is!
You only need a handful of ingredients and about fifteen to twenty minutes.
Slice or Chop Peaches
Since this recipe uses fresh peaches, you will first need to slice or chop your peaches. Unless I'm making hand pies, I like to slice my peaches as you would for a traditional peach pie. However, bigger slices can be challenging to stuff into hand pies. So, in that case, I chop the peaches into small cubes. Thay way, I can get more filling squished in!
Add Ingredients to A Saucepan
Next, add four cups of chopped or sliced peaches into a medium saucepan. Then add in half a cup of maple syrup, half a teaspoon of cinnamon, half a teaspoon of pure vanilla extract and Mix well.
Heat & Add Arrowroot Flour
Now, place the saucepan over medium heat, stirring often. As it heats, the peaches should start to release their juices. Once they do, add in two to four tablespoons of arrowroot flour. (Start with two and add more if you desire a thicker consistency).
Bring to A Boil & Simmer for 10 - 15 Minutes
Keep heating over medium and bring to a light boil.
Once the mixture begins to bubble, turn the heat down to medium-low. Allow to simmer for about ten minutes, or until thickened to your likeness. Stir often to prevent sticking or burning.
Remove From Heat & Let Cool
Once your Fresh Peach Pie Filling has thickened, remove it from the heat and allow it cool before handling.
If you will be baking with this Peach Pie Filling, leave it on the runnier side as it will thicken further when baking. But, if you will be using it for no-bake goodies, like overnight oats, allow it to thicken as much as you desire.
Use Right Away or Jar
You can use this Homemade Peach Pie Filling right away, or can it for later use.
It will last up to seven days stored in the refrigerator.

Easy Homemade Fresh Peach Pie Filling (Without Cornstarch)

Ingredients
- 4 cups Fresh Peaches (Sliced or Chopped *See Notes)
- ½ cup Pure Maple Syrup
- ½ teaspoon Cinnamon
- ½ teaspoon Pure Vanilla Extract
- 2 tablespoon Arrowroot Flour (**See Notes)
Instructions
- Add 4 cups chopped or sliced peaches into a small-medium saucepan. Then add in maple syrup, cinnamon, vanilla extract and arrowroot. Mix well.
- Then add in ½ cup maple syrup, ½ teaspoon cinnamon and ½ teaspoon vanilla extract. Mix well.
- Now, place the saucepan over medium heat, stirring often. As it heats, the peaches should start to release their juice.
- Once it starts getting juicy, add in 2 tablespoon arrowroot flour and mix well. * *If you find your Peach Pie Filling isn't thickening to your likeness, you can add an extra 1 -2 tablespoons of arrowroot flour.
- Keeping stirring over medium heat and bring to a light boil.
- Once your Peach Pie Filling has thickened to your desired consistency, remove from heat and allow to cool.
- Use your Fresh Peach Pie Filling right away or save for later use. It will last for up to 7 days in the fridge.
